For me, baking sourdough became deeply personal when I was diagnosed with Polycystic Ovary Syndrome (PCOS). This condition taught me to take a closer look at what I was eating, how it affected my body, and the importance of choosing foods that support my health.
Through research and trial (and more than a few gummy loaves), I discovered that sourdough isn’t just bread—it’s a healthier, more digestible, and gut-friendly alternative that can transform the way we eat. Here’s why sourdough holds a special place in my heart and how it can benefit your body, especially for those managing PCOS.
What Makes Sourdough Different?
Unlike commercially leavened breads that rely on instant yeast, sourdough is naturally fermented using a “starter” made of flour and water. This starter captures wild yeasts and lactic acid bacteria from the environment, creating a natural leavening process that takes time—often 12 to 48 hours.
This long fermentation period allows the wild yeasts and bacteria to break down the complex carbohydrates and proteins in the flour, resulting in:
